Once I have imported my contacts, if I creat a custom field how do my already imported contacts get affected?

They don't get affected at all. It's just that any data you imported after creating new custom fields can only be mapped over to the newly imported contacts - not the old ones. 

Hence, its best to export all contacts first, then create the new custom field, apply changes to the exported data, add additional data to it and then import everything at once.
